I read the tasting notes and it reminded me of the biscuit tin at ma granny’s, the internationally famous Granny Ping.

You know the tin. The one in the cupboard that comes out as soon as the kettle goes on. This coffee is smooth, sweet and easy to drink. It is the kind of coffee you can sit with for a while.

It is a washed Honduran coffee from COMSA in Marcala, a cooperative of more than 1,500 farmers. COMSA started in 2001 with 61 members and supported organic farming long before it became popular. The coffee is picked by hand at peak ripeness and dried in the sun on raised beds.

Roast: Medium light
Cup profile: Smooth, sweet and like opening the biscuit tin
Recommended methods: Cafetière, filter and AeroPress

It works with every method, including espresso and moka pot. The methods above are just my first choices.

Brew guides

Cafetière
Use 30g of coffee and 500g of water at around 94°C. Give it one gentle stir, leave it for 4 minutes, then press slowly and pour it all out.

Filter
Use 15g of coffee and 250g of water at around 94°C. Pour 45g first and wait 30 seconds. Slowly add the rest and try to finish between 2 minutes 45 seconds and 3 minutes 15 seconds.

AeroPress
Use 16g of coffee and 240g of water at around 93°C. Stir, leave it for 2 minutes, then press gently for about 30 seconds.
