This is a washed Peruvian coffee from smallholder farmers around Moyobamba in the San Martín region. It tastes of plum, orange and baker’s chocolate. It is fruity without being sour and works just as well black as it does with milk.

The coffee is speciality grade, traceable back to the people who grew it and roasted fresh to order.

Roast: Medium
Tastes like: Plum, orange and baker’s chocolate
Recommended methods: Filter, AeroPress and espresso

You can use it in every method, including moka pot and cafetière. The methods above are just my first choices.

Brew guides

Filter
Use 15g of coffee and 250g of water at around 94°C. Pour 45g first and leave it for 30 seconds. Slowly add the rest and try to finish between 2 minutes 45 seconds and 3 minutes 15 seconds.

AeroPress
Use 16g of coffee and 240g of water at around 93°C. Stir, leave it for 2 minutes, then press gently for about 30 seconds.

Espresso
Use 18g of coffee and aim for 40g out in between 28 and 32 seconds. Water around 93°C works well. If it tastes sharp, grind finer. If it tastes dry, go a wee bit coarser.

From the second you open the bag and that smell hits you, you know you’re in for something special. The sign of a great coffee is if you’re able to drink it black, no sugar, no milk or cream, just straight black. And this one is incredible! Like a fine red wine, you pick up something new with each sip. Don’t cover that up by adding other things, and this one is great cold also, perfect for a late afternoon break.
