I'm Inside Yi

This is a natural Ethiopian coffee from Taferi Kela in Sidamo. It has loads of fruit in it, with dark chocolate, blackberry, raisin and red fruits, followed by a tea like finish.

It is the closest I could get to the first speciality coffee I tried and properly fell in love with. The coffee includes Enat Buna, meaning mother tree, heirloom varieties. The cherries are dried whole in the sun before the beans are removed.

Roast: Medium light
Tastes like: Dark chocolate, blackberry, raisin and red fruits
Recommended methods: Filter, AeroPress and cafetière

It works with every method, including espresso and moka pot. The methods above will bring out more of the fruit, but make it however you like.

Brew guides

Filter
Use 15g of coffee and 250g of water at around 94°C. Pour 45g first and wait 30 seconds. Slowly add the rest and try to finish between 2 minutes 45 seconds and 3 minutes 15 seconds.

AeroPress
Use 16g of coffee and 240g of water at around 93°C. Stir, leave it for 2 minutes, then press gently for about 30 seconds.

Cafetière
Use 30g of coffee and 500g of water at around 94°C. Give it one stir, leave it for 4 minutes, then press slowly and pour it all out.
